Bilona Method: The Traditional Way We Make Ghee

Bilona is the slow, traditional churning method behind every jar of Vrishanka ghee, and it's the reason it tastes nothing like the mass-produced ghee on most supermarket shelves. It starts with fresh desi cow milk, which is set into curd overnight the old-fashioned way rather than separated by machine.

 

The curd is then hand-churned in a wooden bilona (churner) to draw out the butter, a slow, rhythmic process that can take hours rather than minutes. That butter is simmered on a low flame until the water content evaporates and the milk solids gently brown, leaving behind pure, golden ghee with a deep aroma and a slightly grainy texture that's the signature of bilona-made ghee.

 

It's a far slower process than industrial ghee-making, which usually starts from cream separated directly from milk. But the extra time is what gives bilona ghee its distinct nutty flavour, golden colour and long shelf life without any preservatives — exactly the qualities we've stood behind at Amarnath Dairy Farms for over 30 years.
